Nutmeg
is a large tree which produces a pale yellow
pear-like fruit. It has a succulent outer
covering and a kernel covered with a bright red
band known as Mace. The dried kernel, and mace
gives rise to the Oil of Nutmeg & the Oil of
Mace, respectively. Nutmeg, like other spices,
must be carefully selected from good stock for
distillation; the process itself needs careful
control in order to obtain the best quality
oils.
