  Botanical - Cinnamomum Zeylanicum (Bark)
The “true” cinnamon of commerce comes from Sri Lanka and is the unique spice for which the island is best known. Cinnamon cultivated in Sri Lanka is “coppiced” regularly and maintained as a bushy clump of shoots. The procedure results in a bark of exclusively gentle flavour and this is the cinnamon of choice in the international market. Quils are made from coiled bark; these are the Cinnamon of commerce. The chips remaining after the quils are made to possess the same high flavour characteristics and are sued for distillation of cinnamon Bark Oil. Cinnamon Bark oil contains Cinnamicaldehyde, Eugenol,Eugenolacetate,Benzyl benzoate.
